Louisiana is the crawfish capital of the world. In fact, crawfich are a multimillion dollar-a-year industry for the state. Now you now, they don't get all their money by throwing huge parties in March :D And, if you are wondering, the REALLY white part of the crawfish is cut out. :) Thanks Meaghan!
